About a month ago some little tomato and lettuce seedlings came on the 4 hour journey with me in my car on one of my many visits to Wales. I planted them up in the greenhouse, watered them in and left them in the supervision of Charles and his Mum. There’s 3 ‘Moneymaker’ varieties and a ‘Mini Italian Plum’ tomato as well as a selection of different lettuce leaves that were all bought from Wyevale garden centre. I got quite a surprise when I peeked inside the greenhouse on my next visit to Wales a month later…
The tomatoes had grown upwards and bulked up a little but the lettuce were stealing the show, they look absolutely beautiful and ready for the picking! They are cut and come again and some of the leaves were getting a little large so I decided that we would have salad for supper. How could you resist tucking into those vibrant and healthy looking leaves?!
I cooked up some chicken, boiled some new potatoes and harvested the salad. Charles added some tomatoes, onions and cheese to mix in with the salad and I coated the new potatoes with my homemade wild garlic butter (recipes coming soon) I even spread a few of the wild garlic flowers over my salad as garnish. It was utterly delicious and probably the most healthy meal I’ve ever had! The salad tasted perfect and I can’t wait for the day when I’m harvesting my own potatoes, tomatoes and onions too.
