It’s official… I have been so behind and just plain rubbish at foraging this year! What with being so busy these past couple of months and July creeping up on me, I just haven’t had any time to do anything. Last year I was over run with elderflower cordial and champagne, so much in fact that I had to throw lots of spoiled cordial away last week. It seems I have completely missed out on the foraging harvest this year as we headed to our favourite spot in the campervan to gather the flowers, only to find most of them had already died. On the plus side this means I might get a bumper crop of elderberries later this year!
I managed to fill a small basket with around 24 elderflower heads, which will be just about enough for around 4 bottles of cordial. I was a little gutted that I had left it so late, the champagne we made last year was so delicious and we must have had about 30 bottles of it! It was especially nice enjoyed on a picnic in the Summer evening sunshine. I’m not going to give up though, there’s still a few favourite foraging spots I might cycle to in my village to see if there’s any elderflower left for me to harvest. Fingers crossed I’ll find enough to make at least a couple of bottles of champagne with!
Even though the elderflower was already dieing away we still enjoyed a lovely little walk in the countryside with the dog. The evening was beautifully hot, the views were to die for and I made a note to come back in September to harvest all those elderberries!
